I’ve said it before and I’ll say it again – morning time is pure chaos over at our place. I’m lucky if I grab a protein bar on the way out the door for our 8am school drop off. Recently I’ve been doing the school run on an empty stomach and then coming home to make a more civilized meal for myself. A few friends were recently chatting about how good eggs and avocado are in the morning so I decided to try this concoction. I must say, it was delicious. Lots of protein, some healthy fats, and a touch of hot sauce to kick start my day.
Ingredients:
- 1/2 Ripe Avocado
- 2 Soft Boiled Eggs
- 1 tbs extra virgin olive oil
- 1 tsp Texas Champagne Hot Sauce
- Salt and Pepper
Preparation:
- Place 2 eggs in a pot of water and bring to a boil.
- Once water is boiling remove pot from heat, cover, and let sit for 8 minutes.
- After 8 minutes dump water, rinse eggs in cold water for 2 minutes, and peel.
- Slice the eggs and avocado and place in bowl.
- Drizzle with hot sauce and olive oil – season with salt and pepper.
- Serve with crackers or toast!
I eat this too! I add a few grape tomatos as well. Another favorite of mine is an egg over easy seasoned with salt,pepper, and chili flakes over a pile of wilted spinach drizzled with olive oil and balsamic! I love breakfast!
